CREAM LAYER:
• 1/4 cup – powdered sugar substitute
• 4 oz. – cream cheese, softened
• 1/2 cup – plain Whole Milk Greek yogurt
• 1 tsp – blueberry extract
• 1 – egg white (save yolk for cake)
• 1/4 cup – blueberries
CAKE BATTER:
• 2 cups – almond flour
• 1 tsp – baking powder
• 1/4 tsp – salt
• 1/2 cup – powdered sugar substitute
• 8 Tbs (one stick) – unsalted butter, room temp.
• 2 – eggs
• 1 – egg yolk
• 1/2 tsp – vanilla extract
• 1 tsp – blueberry extract
• 1/2 cup – Greek yogurt
• 1/3 cup – water
STREUSEL TOPPING:
• granulated sugar substitute = to 1/3 cup sugar
• 1/2 cup – almond flour
• 3 Tbs – unsalted butter, chilled and cubed
