INGREDIENTS:
• 2 qt (8×8 or 9×7) baking dish
• 6 slices – bacon
• 2 lbs. – boneless, skinless chicken thighs, chopped into bite size pieces
• 1/4 cup – extra virgin olive oil
• 1/2 Tbs – dried parsley
• 1/2 tsp – dried dill
• 1/2 tsp – garlic powder
• 1/2 tsp – onion powder
• 1/4 tsp – ground black pepper
• 1/2 tsp – salt
• 10 oz. (approx. 2 1/2 cups) – riced cauliflower
• 4 oz. (1 cup) – shredded pepper jack cheese

RANCH SAUCE:
• 2 tablespoons unsalted butter
• 1/2 Tbs – minced garlic
• 1 1/4 cup – heavy cream
• 1 1/2 Tbs – dried parsley
• 1 tsp – dried dill
• 1 tsp – garlic powder
• 1 tsp – onion powder
• 2 tsp – dried onion flakes
• 1/2 tsp – ground black pepper
• 1 tsp – dried chives
• 1/2 tsp – salt
• 1/4 cup – freshly grated parmesan cheese
