Keto Rice Pudding | Low-Carb Arroz Con Leche Recipe



KETO RICE PUDDING
Honestly, this is two recipes in one, depending on the rice-substitute you pick. With the Miracle rice, the texture is a bit more like tapioca pudding, and with the cauliflower rice it’s a bit more like rice pudding, but both versions taste great! A little extra sweetener and spice help neutralize the cauliflower taste if you take that route, and it helps to use frozen riced cauliflower so you can thaw it and easily squeeze out any excess liquid before using it in this recipe. FULL RECIPE:
YIELD: 1 large bowl (2 servings)

-Heat 2 cups of heavy whipping cream (or 15oz full-fat coconut milk) together with 1/4 cup erythritol (or other keto bulk sweetener) and 1 tsp. of vanilla extract (optionally, add a cinnamon stick or 1 tsp of ground cinnamon).
-Once the sweetener has dissolved, mix in either 12oz of riced cauliflower or an 8oz pouch of Miracle Rice. [If using riced cauliflower, you’ll need to let it simmer longer to evaporate off the extra water content in the cauliflower).
-Sift over 1 tsp of guar gum and whisk VERY well to incorporate, keep whisking as the pudding simmers and continue until it has thickened up, about 5 minutes.
-Remove the optional cinnamon stick, turn off the heat and mix in 1 Tbsp of cold salted butter, then pour the pudding into a heat-safe container and chill overnight in the fridge (or cheat by freezing for 2 hours and chilling in the fridge for 1 hour).
-I recommend either serving it with a dusting of extra cinnamon or with a few low-sugar berries like raspberries or strawberries. It will thicken up as it cools so don’t be impatient!
